YOUR QURBANY SLAUGHTERING: THE IMPORTANCE OF THE SEPARATION PROCESS BETWEEN MEAT, BONE AND VISCERA

PROBOLINGGO. In this Eid al-Adha (01/09), 1600 goats and 250 cows will be processed from slaughtering, boning up to freezing.

“The slaughter began at 09.30 WIB. The process of slaughter involving 400 people divided into groups. Every slaughtering group is overseen by QC (Quality Control) in charge ensuring the process of slaughter according to the Shari’a, ” Deni Wahyudi said, Superqurban Production Coordinator.

After the slaughter, the qurban animal has been declared died will enter the process of boning, that is separation between meat, bone and edible offal.

“The process of boning is very important, the officers must be thorough, because only pure meat will be made into corned beef and rendang, ” Deni said.

“For other animal parts, such as head, viscera, skin and legs will be separated to be distributed directly to residents in Wonomerto District, Probolinggo, “he added.

The separated meat is put into baskets, each basket contains 10 Kg of meat. Meat in basket then transported to a freezing location by car cooler.

“These meats will be frozen before they are produced into corned beef and rendang. Please pray, hopefully every process running smoothly so that the production of corned beef and rendang Superqurban is complete on time, “said Deni.
